Last night I made another delicious meal that was low-fat.  You can have a cup and it's filled with tons of veggies!

In a 9x11 sprayed dish at 350 for 40 minutes you will combine: 2 cups cooked chicken, 1/2 cup diced carrots, 3 cups zucchini, 1 60 oz. box low-sodium stuffing, 3/4 cup margarine (you could even try applesauce - hey, see what happens!), 1 cup fat-free sour cream, 1 can 98% fat-free/low-sodium condensed cream of mushroom, and 1/2 cup onions.  It was delicious!  The whole family enjoyed it!  This also allowed me to use a lot of veggies from our garden which I love!  

reakfast -

JC Breakfast Stuffed Sandwich

Banana

1 cup coffee with tsp. fat-free creamer

Snack -

JC Anytime Bar

Lunch -

JC Personal Pizza

Fresh green beans

DINED OUT

 

Caesar salad no dressing 

Snack -

3/4 cup grapes

Dinner -

JC Spaghetti and Meatballs

Salad (mixed greens, peppers, mushrooms, tomatoes) 2 tbsp. light ranch

Snack -

JC Chocolate Chip Snack Bar
