I promised you I would put on here the recipe for the Red Onion Potato Salad that only had .6g of fat and 113 calories today - if I thought it was good.  Well, the verdict is in, it was awful.  I couldn't even stomach it.  You boil red potatoes to make 4 cups and then dice them.  It had celery, green onion, red onion, carrots, fresh squeezed lemon, garlic, pepper, and vanilla yogurt.  I love yogurt in sauces, it's low-fat and provides a creamy consistency.  However, I think maybe it could've been better with plain yogurt.  Having sweet vanilla flavoring with your veggies just doesn't make sense.  Gross.  Not even my husband or father-in-law would touch it and both of them are big believers of not wasting things.  They would eat anything!  The really annoying part is when you labor over something and it tastes like crap.  I hate peeling potatoes so darn it, if I'm going to all the trouble it should taste good!  Please share your own recipes on here if you get a minute (with nutritional content).

JC Lemon Mousse Bar
