Wishing all of my reader's who are mothers a HAPPY MOTHER'S DAY!  I hope you have a nice, relaxing day.

I had a GREAT 1st Mother's Day.  My husband, son, and I spent the morning shopping (I love to shop so of course this was a great way to start off the morning).  I was on a mission to get some capri's for work because I noticed the temperatures in Cincinnati are finally! going to be warmer.  I'm obviously not size 0 yet so all of my summer stuff pretty much doesn't fit.  But, the good news was, I purchased 3 pairs of capri's at size 4!  Whoooo!  I went down another size.  I'm not sure these birthing hips will ever go back in but oh well, things can't be perfect!  Again, I could lie and say that's it not about a number but to me, it still does matter.  Shopping was a success!

The afternoon was lovely as well.  My husband watched our son so I could cut the grass (my way of relaxing) and then we had a cookout for my Mom.  My husband made a divine, low-fat Caribbean Jerk Shrip dish from Cooking Light.  It was 230 calories and 9g of fat.  It was a seasoned shrimp with veggies on skewers on the grill with a Caribbean salsa (red onion, cucumbers, pineapple, cider vinegar) over a serving of quinoa.  You can go to the Cooking Light website and check it out!

Breakfast -

JC Breakfast Stuffed Sandwich

Banana

1 cup coffee with 2 tsp. fat-free creamer

Lunch -

JC Cheesy Enchilada

Carrots

Snack -

1/2 cup pineapple, watermelon, grapes

Dinner -

1 cup quina with 4 shrimp and 1/2 cup of Caribbean salsa

Grilled veggies with 1 tsp. olive oil

Snack -

JC Toffee Cookies
