I saw a great article in the November issue of Cooking Light Magazine, about how the younger generations (Generation F), are taking an active interest in an emerging specialty food industry called Artisanal.

Artisanal encompasses a wide range of purveyors that are independently owned, selling hand-crafted food with small-scale production and trendy packaging/marketing.  It often involves a unique flavor blending and is really considered an ideal vs. and idea.

I saw a vendor like this at our weekly, organic neighborhood street market.  He was selling specialty pickles that blended the oddest flavors.  The young man seemed to be in his early 20’s and was passionate about his product I loved the creativity of his concept.

The article called this new trend of this Generation F, “A taste-bud epiphany, plus in the newer generation, the addition of a thick dollop of youthful idealism” (sounds so provocative!) Having come from a restaurant family who is still in the business, I applaud innovation and creativity.  We can all benefit from it!

Breakfast-

1/2 serving Egg dish casserole * (60 cal.)

Whole wheat English muffin, 1 tbls no sugar added, apple butter (110 cal.)

1/2 cup mixed berries, 1/2 cup non fat vanilla yogurt ( 65 cal)

A.M. Snack-

whey protein shake with 1/2 cup pasterized egg whites (160 cal.)

Lunch-

3 oz Ahi tuna steak, with roasted sesame seeds( 166 cal.)

1 cup green beans ( 30 cal)

1 cup brown rice ( 138 cal)

P.M. Snack-

0% fat greek yogurt with blueberries, sprinkle of granola ( 160 cal.)

Dinner-

5 oz. salmon- (300 cal.)

Salad- 1 sweet red pepper, 1 yellow tomato, 1/2 cup thawed edamame, 1 cup romaine lettuce, EVOO, drizzle of red wine vinegar (150 cal.)

Dessert-

1/2 cup non fat cottage cheese, strawberries, sprinkly of sliced almonds (110 cal.)

TOTAL CALORIES- 1461
