I'm not kidding, we have about twenty zucchini from our garden and more keep popping up! I think we may have planted one too many. Tonight I'm going to make a zucchini casserole. It calls for light mozzarella, tomatoes, basil, oregano, onions, light cottage cheese, and thinly sliced zucchini. Not too fattening and very healthy with all the veggies and light cheese. I will gladly take any recipes using zucchini if they are low in fat if any of you have them! The zucchini bread we made with applesauce, while wasn't as "desserty" as the one we made with oil, it was still very moist and delicious. FRIDAY Breakfast - 3/4 cup of Bran and 1/4 cup raisins Nectarine 1 cup fat-free organic milk Lunch- Salad (salsa, spinach, mozzarella, cucumbers, tomatoes, fat-free ranch) Snack - Fat-free yogurt 3/4 cantaloupe Dinner - 1 cup zucchini casserole Snack - 100 calorie pack
