Today I decided to make a recipe from the zucchini from our garden. I cooked whole wheat pasta and sauteed zucchini with spray butter and pepper. While these two items were cooking I sliced and diced 6 Roma tomatoes and put in a separate bowl. Add in a pound of low-fat mozzarella, basil, garlic, and mix items with a little olive oil. Once the pasta is done add zucchini on top and a 1/2 cup of the mixture. It's very light but filling. WEDNESDAY Breakfast - Slice of zucchini bread made with applesauce (no sugar-added) 1 cup fat-free organic milk Nectarine Lunch - DINED OUT Turkey on flatbread with lettuce, tomato, and pickles Fat-free yogurt Snack - 3/4 cup of blueberries Dinner - 2 oz. pasta with tomato and zucchini recipe (see above) Snack - Skinny Cow
