Saturday I took my husband to a really nice restaurant that overlooked the city.  I can't begin to tell you how delicious the food was!  One of the first problems I ran into was that the menu mostly consisted of beef or fish.  There was one chicken dish that honestly didn't sound that appealing to me.  That's when I noticed the bison meatloaf.  I remembered a friend telling me that bison is an extremely lean meat.  I decided that was the dish I was going to order.  I loved it!  I wish I would have ordered it without that the sauce it had swimming around it.  But, let's be honest, it was a fancy restaurant with fancy names and I was unsure of the sauce it described on the menu.  When in doubt (I should've followed my instincts) ask for it on the side.  The sauce ended up being ok, it was just to "rich" for me.  The meatloaf was good enough on it's own.  Now that I'm home I got curious as to whether bison is really low-fat.  For those of you that don't know, bison is buffalo.  According to the site meramecbison.com, it's less cholestoral than chicken without the skin, 1.8g fat, 72-92% less fat than beef, and 30% higher in protein than beef.  I know it may sound strange, but try it, you may like it.

SATURDAY

Breakfast -

1 serving of corn muffins (3g fat, 190 cal) with spray butter and sugar-free honey

3/4 cup of cantaloupe

1 cup fat-free organic milk

Lunch -

SUBWAY

Grilled Chicken flatbread with lettuce, tomato, and pickles

fat-free yogurt

Snack -

Apple

Dinner -

Dined out for hubby's birthday

Approximately 2 oz. of bison meatloaf

half of the serving of wild rice

Grilled asparagus

Snack -

2 tomatoes with 1 slice of mozzerella drizzled with balsamic
