Every other Friday morning different staff members are in charge of breakfast for everyone. My group was in charge yesterday. Typically people just bring donuts and bagels and I do not participate in the eating because it's too high in calories and fat for me. However, this time I decided to bite the bullet (I'm always lazy after work and the thought of cooking is not high on my priority list) and make a casserole. But, I decided if I were going to make a casserole it was still going to be low-fat. Lol, I know, most people do not want that but I'm sticking true to who I am! So, I made an egg and sausage casserole. The recipe called for six, eggs, white bread, pound of sausage, cup of cheese, tsp of salt and ground mustard. Instead, I used turkey sausage, low-fat cheese, and wheat bread. Next time I want to go even further and try egg beaters instead of high-fat eggs. The best part about it is, my co-workers LOVED it. Any little bit to make a recipe healthier - why wouldn't you?! SATURDAY Breakfast - 1 egg over easy with 2 pieces of whole grain toast Banana 1 cup fat-free organic milk Lunch - 2 oz. couscous, 2 oz. crabmeat, broccoli, spray butter, and parmesan cheese Fat-free yogurt Snack - 2 clementine's Dinner - 2 oz. Laura's Lean Beef on whole grain bun with 1/4 cup fat-free cheese and a pickle Salad (mixed greens, peppers, tomatoes, cauliflower, croutons) 2tbsp. light ranch Snack - 100 calorie popcorn
