My husband is always asking me to make eggplant parmesan.  I avoid making it because I love it too and it's full of fat.  However, I decided to try a low-fat version of the meal from Cooking Light, one of my favorite low-fat magazines and websites.  It actually was delicious!  There are 8 servings in the pan, 298 calories, and 8.5 grams of fat.  Not only did I love it; but so did my husband!  If you would like to try the recipe go to this website: my recipes.com

SUNDAY

Breakfast - 

1 serving of Fiber One Pancakes with 1/4 cup sugar-free syrup

Banana

1 cup fat-free organic milk

Lunch - 

2 oz. Laura's Lean Beef, 1 whole wheat tortilla, tomatoes, lettuce, and 1/4 cup fat-free cheese

Fat-free yogurt

Snack - 

Apple

Dinner - 

Eggplant Parmesean

Salad (romaine, tomatoes, croutons) 2 tbsp. light ranch

Snack - 

100 calorie pack
