Looking for a soup that's under 300 calories a serving and less than 8 grams of fat?  I made a delicious Spicy, Nacho Cheddar Cheese Soup.  Combine 10 ounces of corn, 1 can of Condensed Nacho Cheddar Cheese Soup, 1 pound of shredded chicken, and 1 can of no salt added mexican stewed tomatoes.  You can cook it in the crock pot for four hours or just let it come to a boil on the stove.  Either way it's delicious!  After it's been cooked you scoop out approximately 1 cup and add just a sprinkling of fat-free cheddar cheese and cayenne pepper (to your own taste).  My husband and I both ate it last night and he actually loves it even though it's "healthy."

WEDNESDAY

Breakfast - 

1 Morning Star Veggie Sausage, 100 calorie English Muffin, 1/4 cup Break-free egg

Banana

1 cup fat-free organic milk

Lunch - 

1 Lean Pocket (under 300 cal, 8g fat)

Carrots

fat-free yogurt

sugar-free jello

Dinner - 

2 oz. grilled chicken

1 small sweet potato

Salad (mixed greens, mushrooms, peppers, croutons) 2 tbsp. light ranch

Snack - 

100 calorie pack
