2/15/14 Katie's Healthy Eating Journal: Monday

Saturday and Sunday we hiked through the Smoky Mountains for about an hour each day.  I burned approximately a total of 500 calories in the two days...maybe even more considering it's basically an incline most of the way.  I know those mountains have worked my legs because my calfs burn!  If you are going to splurge while on vacation just make sure to balance it out with a good workout each day.  I knew we were going to be eating out a lot and possibly some late night snacking.  To avoid gaining weight my husband and I made sure to wake up each morning and hike for 60 minutes to burn some of the higher-fat foods we may have ate the night before.  It's always important to enjoy yourself on vacation, this does mean splurging and relaxing a little bit.  But, I know myself and if I didn't try to balance it out by exercising I would feel like crap (sluggish) and mentally feel like crap for knowing I just let myself go and didn't try to maintain some sort of balance.

 

 

 

 

 

 

 

MONDAY

Breakfast - 

DINED OUT AT THE PANCAKE HOUSE

Banana

Low-fat/low-car 3 small pancakes with sugar-free syrup

Lunch - 

DINED OUT (SUBWAY)

1 veggie flatbread (tons of veggies and spicy mustard)

Jenny Craig Vitamin Bar

Snack - 

Apple

Dinner - 

Jenny Craig Rising Crust Pizza

Salad (mixed greens, mushrooms, croutons) 2 tbsp. light ranch

Snack - 

1 mini 100 calorie vanilla ice cream cone
